Dungeness Crab Louie
It's been described as the King of Salads. Yes, its rich and delicious. Sure its filling and yummy. And its beautifully paired with a dry Chardonnay. How can you miss?
Serves 2-4
Dressing
- 1 cup Mayo
- 1/4 cup ketchup
- 1/4 tsp Tabasco
- 1 TBSP horseradish
- 1/4 cup heavy cream (whipped)
- 3 TBSP yellow onion (minced)
- 2 TBSP lemon juice
- 2 TBSP green pepper (chopped)
- 1 hard boiled egg (grated)
- 1.5 tsp Worcestershire sauce
Salad
- 1 lb Dungeness Crab meat
- 2 Romaine Lettuce Hearts (chopped)
- 1 Heirloom tomato (cut into wedges)
- Olives (Kalamata are best)
- 1 Hard boiled egg (sliced)
- 1 Persian cucumber (chopped)
- Lemon wedge
- Avocado (sliced)
In a bowl, mix all dressing ingredients together and season with salt & pepper. Let stand at room temp for 15 minutes
Toss the crabmeat with the dressing
Add the crabmeat on top of the salad platter
