Espresso Seared Ahi Tuna w/ Sauté Ratatouille and Mango Chutney Sauce
The Espresso in this Recipe gives the tuna a nice roasted coffee flavor, not too strong. Simple take some espresso on a plate and coat tuna on flat sides with espresso. Take Ahi Tuna and sear in hot pan on all side for 30-60 seconds per side. Place in the middle of the plate the Ratatouille, Place Tuna fish on top and drizzle sauce over top. Can serve with favorite rice or roasted potatoes. Enjoy
Ratatouille Sauté
Ingredients:
Dice Vegetables into 1/2 pieces. Heat pan to med high heat, add olive oil, add garlic and onions. Sauté for 1-2 minutes. Add in all vegetable and continue to saute for 3-4 minutes, add in herbs and reduce heat to low. Add Salt and Pepper to taste. Can let stew on low hear or serve with a crunch.
Spicy Mango Chutney Sauce
Ingredients:
Puree Mango Chutney in Food Processor, add vinegar, then oil, siracha. Adjust thickness with water. Fold in optional ingredients.
Ratatouille Sauté
Ingredients:
- 2ea Large Tomatoes
- 1ea Eggplant
- 1ea Zucchini
- 1ea Yellow Squash
- 1ea Red Onion
- 1ea Red Bell Pepper
- 4 cloves Garlic Chopped
- 1/4 bu Basil
- 1 tbs Oregano
- 1/2 tsp Chili Flakes
- 4 tbs Olive Oil
- Salt & Pepper To Taste

- 1/8 cup Siracha
- 1/4 cup Olive Oil
- 1/4 Rice Vinegar if using Fresh Mango
- Optional: Green Onions
- Cilantro
- Water to thin out
